Bell Pepper Adobo

Bell peppers are high in antioxidants and they are especially rich in vitamins C, E and beta-carotene.
So using these bell peppers as my main ingredient in cooking one of Filipino’s famous dishes "Adobo" is such a delight.
I call this Vegetarian Adobo! Give it a try!
DESCRIPTION
Healthier and lighter version of Pinoy Adobo using bell pepper instead of meat.
INGREDIENTS
2-3 tablespoons oil
6-8 cloves garlic, peeled and crushed with the side of the knife
1 red onion, thinly cut
1 kg bell pepper (different colors, green, yellow, red and orange) 4-5pcs
1/4 cup soy sauce
1/4 cup white vinegar (cane or coconut vinegar)
1/4 cup water
1 teaspoon whole black peppercorns
1 tablespoon brown sugar
2 bay leaves
PREPARATION
Step 1
Heat the oil in a pan over medium heat.

Step 2
Saute the garlic until released the aroma, then the onion and cook until soft for 2-3 minutes

Step 3
Toss in the bell pepper and cook for 3-4 minutes or until they start to soften

Step 4
Pour in the soy sauce and vinegar, add bay leaves, whole peppercorns, and sugar. Bring the liquid to a boil over medium-high heat.

Step 5
Once boiled, reduce the heat to low and stir. Cover and simmer for 20 minutes or until the bell pepper becomes tender but not overcooked.
TIPS AND TRICKS
Serve the adobo with hot white rice. Buon appetito!
