Spaghetti all'assassina is a very quick dish to prepare, suitable for the warm season.

Nowadays, people see it on the menus of some restaurants.
INGREDIENTS
200g dry spaghetti
250g pure tomato sauce
2 tbsp tomato paste
650ml water
1 cloves garlic
red chili flakes/fresh chopped chili
3 tbsp olive oil
1tsp salt
½tsp sugar
PREPARATION
Step 1
Before making this recipe you should activate your instinct mode and your listening skill. Be attentive!

Step 2
In a small saucepan with 600 ml water, add in  2 tbsp tomato paste, 300g pure tomato sauce, and 1tsp salt. Stir, and bring to a simmer.

Step 3
Pour 3 tbsp of olive oil into a large cast-iron or heavy stainless steel skillet. The pan should be the same length as the spaghetti.

Step 4
In medium-high heat, add in sliced garlic, and a sprinkle of red chili pepper flakes or freshly chopped chili. Pour a ladle of sauce into the and heat over high temperature until sizzle. As the water evaporates, add some more sauce for the pasta to cook.

Step 5
Put the dry spaghetti in and spread evenly on the pan. At this point, you need to listen carefully and wait patiently. The goal is to let the pasta slightly burn on the bottom before turning over to the other side. When you reached that goal, flip it over.

Step 6
Pour another ladle of the tomato sauce whenever your pasta gets dried and the sauce has about to evaporate. Repeat the same procedure until the pasta has cooked al dente, this will take 8-10 minutes.

Step 7
When the spaghetti is almost completely cooked, stop adding sauce, raise the flame to the maximum and let them sizzle for a few minutes, without touching them, so that the crust is created.

Step 8
Finish cooking by raising the temperature, letting the bottom burn to make the pasta crispy and golden.
Cooking directly in the pan, you will get a crunchy and tasty texture

Step 9
Now it's ready to serve! before serving drizzle with olive oil.
Buon appetito!
