My Adobong Manok

You know, living in Italy I often need to make some adjustment to my filipino dishes,
since sometimes I can't find here the right ingredients or just to make them more close to the european taste.
So today I wanna share my version of Adobong Manok which my Italian husband really loves.
DESCRIPTION
This is not your “basic” Chicken Adobo simply because I added potatoes and large cuts of onions to it.
This added texture and made this dish tastier. It has been included in my husband’s growing list of favorite Filipino dishes.
INGREDIENTS
For the Adobo:
1.2 kg bone-in chicken thighs breast or drumsticks
1 tablespoon oil
6 cloves garlic, crushed
1 teaspoon brown sugar
2 bay leaf
1 large onion, sliced into rings

For marinade:
1 cup (250ml) Filipino cane vinegar or white vinegar
1 cup(250 ml) soy sauce
1/4 cup (65 ml) freshly squeezed calamansi or lime juice
PREPARATION
Step 1
First, combine the marinade ingredients in a large ziplock bag or a non-reactive container and mix until thoroughly combined. Add the chicken and marinate in the refrigerator for at least 6 hours, or preferably overnight.

Step 2
Remove the chicken from the marinade. Set aside the marinade.

Step 3
Pour the oil into a pan over medium heat. Add the crushed garlic and saute until lightly browned then add the chicken and saute for 10 minutes or until lightly browned on each side

Step 4
Now pour the reserved marinade, peppercorns, sugar, and bay leaf.
Bring to a boil and cover the pan then reduce the heat to medium-low. Simmer for 30 minutes.

Step 5
30 minutes later, uncover the pan and add in the potatoes. Cover again and let it cook for 10 minutes or more until the meat is tender.
last, add the onion and simmer for 5 minutes more.
Ready to serve!!
TIPS AND TRICKS
Avoid using a metal container in marinating your meat because it can react chemically to the acid we put in the marinade ingredients.
