Today I'm going to show you how to level up your sandwich using your pizza dough. In this recipe, I'm sure you will enjoy eating pizza even for breakfast đđ. Enjoy!
Itâs a pizza dough but folded to make a pizza sandwich. I didnât use tomato sauce on this one but you may if you want to. Itâs very crispy on the outside and full of juiciness and yumminess inside. This you gotta try!
INGREDIENTS
Ingredients for the dough: 250g warm water 4g sugar 3g instant dry yeast (fresh yeast 8g, active dry 5g) 400g strong flour (11-13% protein) 12g salt 12g olive oil
Ingredients for the toppings: arugula / valerian red onion tomatoes mozzarella prosciutto cotto/cooked ham anchovies (or toppings of your choice)
Step 1 In a large bowl, pour in the warm water, and add the sugar and yeast. Mix until dissolves the yeast then add in half of the flour and give it a mix until no lumps. Step 2 Put the salt and the rest of the flour but leave a little bit for kneading. Start gathering all the flour and once it formed, pour in the oil. Fold the dough until the oil is absorbed.
Step 3 Sprinkle a little bit of flour on the work surface and flour your hands. Knead the dough until it becomes elastic which will takes 8 to 15 minutes, depending on what type of flour you are using. The higher the protein level the quicker it absorbs the water and the faster it develops the gluten. Step 4 Transfer the dough back into the bowl, cover with a kitchen towel or plastic wrap and let it sit for one hour. Step 5 After 1st fermentation, transfer the dough to the counter and divide it into 2-3 then form each dough into a smooth ball.
Step 6 Transfer the balls to a greased baking pan or container. Rub a little bit of oil on the top then cover it well with plastic wrap. Proof for 3-4 hours or until double in size.
Step 7 Stretch the dough and slightly flatten the edges. Before baking brush or pour a little oil on the base, then fold it in half to get a crescent shape. Press lightly on the fold but not on the edges.
Step 8 Transfer to the baking pan with parchment paper. Repeat the same procedures for the rest of the dough. Step 9 Once done, load in the oven and bake in preheated oven with a maximum heat of 250°c and bake for 7-8 minutes or until the crust is golden brown. Unload from the oven and open it to stuff it. Step 10 First put the slices of tomato, a drizzle of olive oil, salt, basil, and oregano. Then put the mozzarella cheese and slices of onion. Spread arugula and season again everything with olive oil and balsamic glaze (optional). Or you may fill with the filling of your choice.
TIPS AND TRICKS You may switch the fillings up so youâll just never get tired of eating this!
