DESCRIPTION
Rolled up, soft and fragrant, in Sweden they are known as Kanelbulle, and are served during fika, the traditional coffee break with sweet.
In this video recipe, I also shared how to effectively knead your dough without a dough mixer.

INGREDIENTS
For the Bread:
615g bread flour
60g sugar
5g instant dry yeast
5g salt
1 large egg
120ml warm water
120ml warm milk
80g melted butter
For the Glaze:
150g powdered sugar
2-3 tbsp water
For the filling:
110g sugar
15g cinnamon powder
15g melted butter
PREPARATION
Step 1
Start by melting your butter using the water bath technique. Pour all liquid ingredients into a bowl, warm water, warm milk, melted butter, and egg.
Next, combine flour, sugar, and yeast. Pour half of the flour into the liquid ingredients. Mix well.
Step 2
Add salt and gradually add the remaining flour. Mix well until formed. Spread a little bit of flour to work easily.
Transfer the dough on the working surface and start to knead for 8-10 minutes, or until smooth and elastic.
Step 3
Transfer dough ball to a bowl and cover with plastic wrap. Allow dough to rise for 30-40 minutes.
Step 4
After 1st fermentation, transfer on wooden board. Roll the dough out into a larger rectangle approximately 40X35 cm (you can use an empty bottle).
Step 5
Brush with melted butter. Generously sprinkle with cinnamon and sugar filling distribute over the entire surface.
Step 6
Roll up slowly the dough, tightening the log as you go.
Cut using knife. For the final cut, I use my index finger for about 2cm.
Step 7
On a 40X30 cm baking pan, sprinkle with the remaining filling.
Place the dough in the pan, spacing them about 1cm away from each other. Let it rise for 30 minutes.
Step 8
Bake in a preheated oven 180 degrees Celsius / 350 degrees Fahrenheit for 25-30 minutes.
Step 9
While waiting, prepare the glaze in a bowl with powdered sugar, add 2-3 tbsp cold water mix until you get a sticky consistency.
Step 10
Once cooked let them cool completely. And spread the sugar glaze.
TIPS AND TRICKS
Instead the glaze, you can also try to use butter cream cheese to spread on the cinnamon rolls, for a cheesey and creamy taste.
