Dark Chocolate Cake

My husband is a great chocolate lover and he keeps on requesting me chocolate dessert

So I thought to a simple cake, simple to make and has simple ingredients, it doesn't need baking powder, but its taste is not simple, it's fancy! it's very moist, soft and has a strong chocolate taste

it'll melt in your mouth. Come give it a try!

DESCRIPTION
We all know that too much of everything is bad for us but every now and then it is healthy to eat heavenly foods like sweets and chocolate. They have nutritional benefits, too, most especially dark chocolates which is what I used in this recipe. Dark chocolate has antioxidant properties, and can boost your focus and your energy. So why not use a few bars of these yumminess in a cake. This moist dark chocolate you gotta try. It’s super easy and just delightful enough to satisfy those sweet tooth cravings.
INGREDIENTS
175g eggs ( 3 medium eggs)
180g sugar
125g unsalted butter, melted
150g dark chocolate (50-70%), melted
30g whole milk
60g bitter cocoa powder
50g flour
1 tablespoon cherry liqueur or rum (or liqueur of your choice, optional)
PREPARATION
Step 1
To start,preheat your oven and line the bottom of the 20-22cm spring form or baking pan with parchment paper then grease the side.

Step 2
Melt the butter and chocolate together using the water bath technique or bain-marie. I'm using 50% dark chocolate but you can
also use 70% or it depends on you if you want bitter you can use a higher percentage. Set aside and let it cool before using.

Step 3
Pour the eggs and sugar into a mixing bowl and add a pinch of salt. Using the electric hand mixer, mix on medium speed for 8-10 minutes or until fluffy and pale.

Step 4
Add the room temperature melted butter and chocolate. Then mix until everything is incorporated. Avoid overmixing.

Step 5
Get the sifter and sift the powdered ingredients, cocoa powder, and flour.
Using a spatula, fold gently from bottom to top until the mixture is completely combined. this is the consistency we want to achieve
After you reach this, let's transfer it to our baking pan. Level the surface and top on the counter.

Step 6
Bake in preheated oven 180°c/350°f conventional oven for about 30 minutes on the lowest shelf of the oven. Before removing, do the toothpick test, if the toothpick comes out clean, it means the cake is ready.

Step 7
Remove from the oven, put on the cooling rack or on the top of the stove.  Let it cool for 5-10 minutes before removing it from the pan.

Step 8
You may put buttercream or cream on top or you can also use this to make a layer cake. But now I prefer to decorate my cake in a very simple way by using only icing sugar and some cherries or berries on the top. Enjoy!
TIPS AND TRICKS
To longer the shelf life of your chocolate cake, you can put inside the fridge making sure that you wrap it tightly using plastic wrap or put in a airtight container, to keep them fresh and moist.
Store in refrigerator for up to 1 week.
