I love pancakes because they are so fluffy and delicious, but as always I wanted to add my personal touch in this very popular recipe. Pancakes are easy to make yet so tasty and simply perfect as breakfast or even as snacks.
Pancakes are fluffy desserts originally from North America, usually served at breakfast with maple syrup, jam or spreads. In this recipe, I did something extra to make the pancakes extra fluffy which makes these extra special. Let's discover it together!
INGREDIENTS
25g melted butter 125g flour 2 medium eggs 200g milk 6 grams baking powder 20g sugar pinch of salt syrup
PREPARATION
Step 1 Let's start by separating the egg whites from the yolks. Step 2 Beat the egg yolks with a hand whisk then add in melted butter and a pinch of salt. I melted my butter using a water bath or bain-marie technique, but you can also use your microwave oven. Step 3 Pour in the milk, continue mixing until you get a clear mixture. Add the baking powder into the flour and sift in the bowl with the egg mixture. Mix everything until incorporated but avoid over mixing the batter. Set aside.
Step 4 Next, we are gonna whisk the egg whites to turn it into a meringue. By using a hand electric mixer, whisk it to get a foamy texture then add the sugar and whisk until you get a soft peak. Step 5 Get the egg mixture and incorporate the egg whites; mixing it from top to bottom to avoid collapse. Remember to avoid over mixing it because if you do you get a flat pancake. Step 6 Heat the pan on low medium heat, not too high, or else you won’t give enough time for the batter to rise well. Using kitchen paper, grease the pan with a little bit of butter. Step 7 Use 1/2 cup to pour the batter so you will get the same size pancakes. Start pouring in the batter on the center of the pan, no need to spread. Step 8 Once the bubbles start appearing on the surface of the batter, it means it's time to flip. Don't rush flipping the pancake let it cook with a nice golden color on both sides. Step 9 Cook the rest of the batter. Arrange on the serving plate with your favorites toppings and syrup. I prefer using honey on my pancakes! Sweet and tasty! Buon appetito! Ciao for now!
TIPS AND TRICKS
For the best result use nonstick pan and avoid over mixing the batter because if you do you get a flat pancakes.
