Back at home, in the Philippines, mussels are commonly served as ulam. My mom loves to cook it as a delicious mussel soup. Here in Italy, we don’t get fresh mussels that easily, so I bought them frozen. So today, I’ve decided to fry it and see if it would taste just as good as its soup version.
Fried mussels are prepared in different ways even with shells, well, our traditional recipe is not like that. These breaded fried mussels can be prepared as an appetizer but they’re just as good as your tasty ulam partnered with hot rice. So, let's proceed!
INGREDIENTS
400-500g mussels 1-2 tablespoons of parsley 1-2 eggs flour, as needed breadcrumbs, as needed oil for frying salt and pepper to taste
PREPARATION
Step 1 Beat 2 eggs, add pepper, and chopped parsley. I don't put salt because that can make the breading fall.
Step 2 Let's bread the mussels. The first pass in the flour, coat the mussels all together not one at a time. Shake off the excess flour.
Step 3 Transfer the coated mussels to the beaten eggs. Use two forks to dip completely into the egg and finally in the breadcrumbs.
Step 4 Heat the oil over medium flame. Fry the mussels in plenty of hot vegetables or seed oil until golden, about 2 or 3 minutes.
Step 5 Once cooked, transfer on the plate with absorbent paper, season with salt, and serve hot with lemon. Buon apettito!
TIPS AND TRICKS
For fresh mussels, put in a pan over high heat with a little extra virgin olive oil and garlic, keeping the lid tightly closed. Once opened, remove the shellfish from the shells.
