I got egg whites stock in my fridge from when I made my homemade ensaymada. Of course, I won't absolutely waste it! So I turned them into tasty, melt-in-your-mouth lengua de gato cookies!. Happiness for kids and adults especially with ice cream.
Lengua de gato are buttery cookies that melt in your mouth, tasty and so simple to make. Your cookie jar should be filled up with these delicious, buttery lengua de gato cookies. Try eating them with ice cream, pastry cream or chocolate, it’s perfect!
INGREDIENTS
140g butter 140g powdered sugar 80g egg whites 160g cake or all-purpose flour 50g corn starch or potato starch pinch of salt 1/4 tsp vanilla zest of lemon
PREPARATION
Step 1 In a mixing bowl combine the powdered sugar, butter, vanilla, and pinch of salt. Mix until the sugar is incorporated into the butter. We are using powdered sugar because this cookie is crunchy with a very fine texture and when you eat it, it melts in your mouth. If you are going to use normal sugar the grains inside remain rough.
Step 2 Incorporate the egg whites and mix over medium speed. Sift the powder over the mixture then add the zest of lemon and using a spatula fold everything well until combined or it forms like a paste.
Step 3 Transfer it into a pastry bag then pipe on the baking pan lined with parchment paper. The length is approximately 3 inches leave around 1 1/2 inches spaces in between for they will flatten when baked.
Step 4 Bake in preheated oven 170°c for 15 minutes or until brown on the edges.
Step 5 Cool completely before storing in an airtight container. There you have it! our crunchy melt-in-your-mouth Lengua de Gato.
TIPS AND TRICKS
Use powdered sugar for smoother and fine texture.
