Only 4 eggs can be transformed in a very healthy an delicious dish. I remember when I was very busy working outside, and coming back home I had only few ingredients and time to prepare the meal. So, let's take our scrambled eggs to the next level with this recipe! It’s saucy and yummy.
Your classic scrambled eggs can be made into something more special using chunks of real tomatoes, dash of sugar, and a slurry of cornstarch mixture. In less than 10 minutes, your breakfast is made into something tastier and healthier. Can't you believe it? Let's try!
INGREDIENTS
4 eggs 3 medium tomatoes (4 small tomatoes) Scallion 2 tbsp ketchup 1 teaspoon sugar 1/2 teaspoon salt 1/2 teaspoon cornstarch 2 tablespoons milk or water
PREPARATION
Step 1 Cut the tomatoes into chunks. Larger pieces will give you a better texture. Next, cut the onion leaves, and separate the white part from the green.
Step 2 Crack the egg and season with a little bit of salt. In medium heat, pour 2-3 tbsp of cooking oil and once it's hot pour the egg and mix quickly, we just need 1 minute. Set aside
Step 3 In the same pan pour a little bit of oil and saute the white part of the onion leaves. Step 4 Add in the tomatoes, salt, and sugar to balance the sour taste then tomato ketchup. Ketchup will enhance the tomato flavor and color. Some like to add soy sauce or vinegar, so It's up to you guys if you want to add a different flavor. Step 5 Cover and lower the heat. Cook until tomatoes are soft. Step 6 Uncover the pan and add 1/2 teaspoon of cornstarch dissolved in 2 tablespoons of milk or water. Cook until the sauce gets thickened. Step 7 Now ready to add the egg. Stir until well combined.
Step 8 For the final touch, add spring onion. Ready to serve!
TIPS AND TRICKS
Best to eat as ulam with hot white rice.
