Strawberry Cheese Cake

My husband is not fan of no bake cheesecake because of the gelatin. So, I thought, why not to make without gelatin?

Surprisingly he enjoyed this one! he almost ate the whole cake and imagine he even asked me to make this more often

Thank you to my brother , who requested me to try this healthy and refreshing dessert.

DESCRIPTION
Cheesecake is perhaps the most famous American dessert in the world, beautiful to look at and delicious to taste, with the unmistakable taste of cheese that characterizes it and has made it famous.
A fresh, light and fragrant recipe with which we can quickly solve the dessert for a lunch or dinner with friends.
This Strawberry Cheesecake is light and not too sweet. No bake is needed. No gelatin used. I’ll eat it down to the very last crumb. 😋
INGREDIENTS
For 20-22cm springform pan

For the crust:
200g biscuits (petit,graham,digestive)
100g butter

For the cream:
170g strawberry
1/2 teaspoon lemon juice
500g cream cheese
200g heavy whipping cream (36-38%fats)
125g icing sugar

For the decoration:
strawberry
whipped cream
PREPARATION
Step 1
The first thing we’ll do is crush the biscuits I’m using Petit an Italian biscuit, feel free to use digestive or graham or biscuit of your choice. I’m gonna use a food processor to crush it. if you don’t have one, you can use a thick freezer bag and put in the biscuits then crush them with a rolling pin or a glass or any hard objects. Blend it until we have fine crumbs.

Step 2
Once done, let’s put it in a bowl then add the melted butter. Mix it with a spatula until it’s well combined. If you want to make your crust special you can add nuts like pine nuts or hazelnuts.

Step 3
When it’s done, put it in a springform pan lined with parchment paper, so it's easier to remove. You can use 20cm to 22cm

Step 4
Then let’s press it using a glass or measuring cup. Make sure to distribute it evenly. You can also use your hands to press the edges, so it’s even. Put in the fridge for 30 minutes to 1 hour to set. But if you’re in a hurry you can also put it in the freezer for 10-15 minutes.

Step 5
While we’re waiting for our crust let’s start to make our filling. Let’s start with the strawberries. Strawberries into the food processor and a teaspoon of lemon juice. Cover then blend it. Then put it back in the bowl and transfer it again to a bowl.

Step 6
Now we’ll get our cream cheese and heavy cream (with 36-38%fats) make sure the cream cheese is cold, especially the heavy cream.  Let’s put the cream cheese in a bowl. Using electric hand mixer or stand mixer let’s mix it until it’s perfectly creamy and smooth, on medium speed. When it’s creamy, add in our powdered sugar or icing sugar, by the way I'm using my homemade powdered sugar (Save Money making Homemade Powdered Sugar).  Mix then join the strawberry. Set aside.

Step 7
Get a separate bowl for whipping our heavy whipping cream. Use a cold bowl so it’s faster to whip. Let’s put the whipping cream in our super cold bowl than our vanilla. I’m using vanilla powder but you can also use the liquid kind. Whip it until it’s a stiff peak. Transfer it in our strawberry cheese cream then fold it gently and carefully so it doesn’t lose its volume.
          
Step 8
Let’s get our springform pan with crust and transfer the mixture then smooth the surface.  My cheesecake has an exaggerated height if you want a thinner one, you can use the 22 cm pan or you can also try 24 cm.
Put  in the fridge for 4-6 hours or overnight.

Step 9
Once ready, you can put decorations. I’ll put in, of course, strawberries and I also thought about putting whipped cream on the sides. 
Our No baked cheesecake is ready! Enjoy!
TIPS AND TRICKS
To make your crumbs special you can try to experiment by adding hazelnuts or nuts of your choice.
For chocolate flavor you can use oreo biscuits or your favorite chocolate cookies.
